The short answer

Wine & Soul is best for travelers who want a focused tasting with real winemaking substance rather than a grand estate spectacle. The Vale de Mendiz winery offers structured tastings by appointment, including formats centered on the project’s principal wines. Quinta da Manoella supports a smaller, longer estate experience and prearranged lunch program, but vineyard access, privacy, hosts and specific bottles always depend on the confirmed reservation. Book at least 48 hours ahead, explain what interests you and allow the estate to confirm the right format.

Two winemakers and one shared project

Sandra Tavares da Silva and Jorge Serôdio Borges arrived at Wine & Soul with established careers and deep connections to Portuguese wine. Their project was personal from the beginning: modest in physical scale, rigorous in its vineyard work and deliberately centered on sites rather than a broad commercial range.

That background matters because Wine & Soul is not built around a monumental visitor center. Its identity comes through conversations about vineyards, parcels, blending and the decisions behind the wines. The most rewarding visit is therefore one in which the tasting has been matched to the guest’s interest, not one chosen simply because it has the longest list.

What ‘let the vineyard speak’ means here

The Douro’s oldest vineyards are often field blends: many varieties planted together, harvested together and understood as one living parcel. Instead of separating every grape into a neat varietal story, Wine & Soul works with the accumulated logic of those old sites—their mixed plant material, low yields, exposures and schist soils.

That does not mean the wines are rustic or unmanaged. Selection is exacting, cellar work is precise and the range includes wines from younger vines as well as old plots. The point is that technique is used to clarify origin, not to erase it. For a visitor, this becomes most obvious when tasting several wines side by side and asking why their textures and proportions differ.

Pintas: the vineyard that started it all

Pintas was Wine & Soul’s founding wine and remains its emblem. The estate currently describes the vineyard as about 89 years old, planted with more than 40 indigenous grape varieties in a traditional field blend. Its small scale and mixed vines make it a concentrated lesson in the older Douro rather than a conventional single-variety vineyard.

The resulting red is dense and structured, but its interest lies in the balance between power, freshness and detail. Pintas Character offers a broader introduction to the house style; Pintas itself is rarer and more demanding. The 2019 Pintas received 97 points from Wine Advocate, one indication of the wine’s critical standing, though a score is less useful than understanding why the parcel is distinctive.

A visit to the Pintas vineyard is offered as an optional, separately arranged extension for very small groups. It is weather- and availability-dependent and should never be assumed from the name of a tasting. If seeing the vineyard matters, request it when booking and wait for written confirmation.

Guru: the white wine that changes the conversation

Guru is the wine that often surprises visitors who arrive thinking primarily about Douro reds and Port. Made from old-vine white grapes, it combines texture and depth with the acidity needed to keep the wine precise. It is a serious white designed for the table and for aging, not a light intermission before the reds.

Tasting Guru beside the estate’s reds also reveals an important Douro truth: altitude, exposure, old vines and careful picking matter as much as the region’s heat. For collectors already familiar with Pintas, Guru can be the bottle that adds the most to the visit because it broadens the picture rather than merely confirming it.

Quinta da Manoella: the estate behind the deeper experience

Quinta da Manoella belongs to Jorge Serôdio Borges’s family history and sits apart from the Vale de Mendiz winery. Its old vineyards, including very old mixed plantings, give Wine & Soul another set of sites and wines through which to interpret the Pinhão Valley.

The distinction is practical. A tasting at the winery does not automatically include Quinta da Manoella, and a Manoella experience is not simply the same tasting in a prettier setting. The estate currently presents it as a longer program for a very small group, bringing together the winery, vineyards, a focused tasting and food. Exact access, wines and routing remain subject to confirmation.

What the current winery tastings offer

At Vale de Mendiz, the current Terroirs tasting is designed as a broad introduction. Its published lineup spans Manoella white or rosé, Guru, Manoella red, Pintas Character and an aged Tawny Port, with about two hours allowed for the visit and tasting. A separate Port-focused format is also currently listed.

The Premium tasting moves into rarer territory, with a published selection that may include Guru, Pintas Character, Pintas, Quinta da Manoella Vinhas Velhas, an older Tawny and Vintage Port, accompanied by regional cheese. The estate allows about two hours for this format as well.

Those published lists explain the intended level, not an unconditional bottle guarantee. Releases can change and the estate notes that some wines may be temporarily unavailable. Ask what will be poured when confirming, particularly if one wine is the reason for your visit.

The estate describes its scheduled visits as intimate and currently limits group size. If having the space exclusively to yourselves is important, confirm that point in writing rather than assuming that a small tasting is automatically private.

The more compelling experience at Quinta da Manoella

For travelers with strong wine interest and enough time, Quinta da Manoella is the more complete expression of the project. The current Manoella Experience is published for a very small group and allows roughly four hours. It combines guided access to the winery and vineyards with a tasting that reaches further into Manoella, Pintas and Port, accompanied by Portuguese snacks.

The appeal is continuity. The vineyard is not background scenery after a technical tasting; it is the reason the wines taste as they do. The longer pace also creates space for questions about old field blends, the family estate and differences between parcels.

Treat the published outline as a framework. Agricultural work, weather and staff availability can change access. A specific host, private format, vineyard walk or rare bottle should be requested but never promised before the estate confirms it.

Lunch at Quinta da Manoella

Wine & Soul currently offers a prearranged lunch program at Quinta da Manoella for larger groups. The published format pairs a traditional Portuguese menu with the Terroirs selection and allows approximately five hours for the full experience. A vegetarian menu can be requested, and a higher wine level may be available by prior arrangement.

This is not a drop-in restaurant and it is not the natural choice for every party. The current minimum group size makes it more relevant to families or friends traveling together than to a couple. Menus, dietary needs, the wine lineup and whether lunch is available on the requested date must all be agreed in advance.

For a smaller party, the Manoella Experience with tapas may offer the better balance: it preserves the connection between wine, food and place without trying to force a lunch format designed for a larger table.

Can you meet Sandra or Jorge?

The founders remain central to Wine & Soul, which naturally leads travelers to hope they will host the visit. They may be present at the winery or estate, but winemakers’ schedules are shaped by vineyards, harvest, blending, travel and commercial work. Their presence cannot be treated as part of a standard reservation.

If meeting one of the founders matters, say so clearly when inquiring. The estate can explain what is possible, whether an additional arrangement applies and who would otherwise lead the tasting. A knowledgeable member of the team can still provide an excellent visit; the mistake is building the day around an encounter that was never confirmed.

Who should visit Wine & Soul

It is less suited to travelers seeking a spontaneous cellar door, a guaranteed founder encounter or a full resort-style estate. The intimacy comes from scale and substance, but that same scale makes advance planning essential.

For a first Wine & Soul visit, choose the Vale de Mendiz tasting that matches your real interest, then pair it with no more than one contrasting appointment elsewhere in the valley. The winery is close enough to Pinhão to work naturally within a thoughtful Douro day, but the roads and tasting pace still argue against overbooking.

Choose Quinta da Manoella when the estate itself is the point and you can protect half a day. Do not schedule it as an upgraded stop squeezed between other appointments. If the Pintas vineyard, lunch, a particular bottle or an exclusive visit matters, include that request from the beginning and build the itinerary only after confirmation.

A private driver is the simplest arrangement for most visitors. It removes concerns about tasting and lets the day absorb small timing changes without turning the road back to Pinhão into a deadline.
